Tradicionalno kolinje.<\/p>\n<p>Kolinje je tradicionalno okupljalo obitelji, kako bi svi zajedno sudjelovali u pripremi mesa za sljede\u0107u sezonu.<br \/>\nKrajem mjeseca studenog spremalo se kolinje, ne samo u na\u0161em dvori\u0161tu, ve\u0107 i kod susjeda.<br \/>\nDjed ili kasnije tata, su imali du\u017enost organizirati cijelo kolinje, od pozivanja najspretnijeg mesara da odradi mesarski posao do cijele organizacije oko spremanja i konzerviranja mesa.<!--more--><br \/>\nSvatko je imao svoje posebne zadatke u tom kolinju. Jedni su pazili da kotlovi uvijek budu puni vru\u0107e vode, drugi su obavljali one meni uvijek mrske poslove sa tran\u010diranjem i rezanjem mesa, tre\u0107i su obra\u0111ivali meso, a neki su pak uvijek bili zadu\u017eeni da \u010da\u0161e ne budu prazne, a niti da mesar i svi pomaga\u010di ne budu gladni.<\/p>\n<p>Od ranog jutra, kad bi mu\u0161karci popili prvu <a href=\"https:\/\/www.bakinakuharica.com\/spajza\/RakijaSljivovica.html\" target=\"_blank\">rakijicu<\/a> za zagrijavanje, pa do kasne ve\u010deri, kada bi svi prionuli na ve\u010deru, rezalo se, tran\u010diralo, mije\u0161alo, nadjevalo i obra\u0111ivalo meso.<\/p>\n<p>Sje\u0107am se da je djed uvijek ve\u010der prije kolinja o\u0161trio no\u017eeve koji su bili kori\u0161teni specijalno i isklju\u010divo za kolinje i ni\u0161ta drugo.<br \/>\nBaka je pripremala velike lonce i rajngle u kojima se odlagalo meso prije same obrade i konzerviranja. Sve je moralo biti o\u0161tro, \u010disto i uredno.<\/p>\n<div id=\"attachment_534\" style=\"width: 246px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/www.bakinakuharica.com\/blog\/wp-content\/uploads\/2014\/11\/pecenaJetrica.png\"><img aria-describedby=\"caption-attachment-534\" decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-534\" src=\"https:\/\/www.bakinakuharica.com\/blog\/wp-content\/uploads\/2014\/11\/pecenaJetrica.png\" alt=\"pe\u010dena jetricaa\" width=\"236\" height=\"186\" \/><\/a><p id=\"caption-attachment-534\" class=\"wp-caption-text\">pe\u010dena jetrica<\/p><\/div>\n<p>Baka je planirala \u0161to \u0107e se jesti cijeli dan, pa je uobi\u010dajeno za doru\u010dak mesare do\u010dekivao tanjur narezanih suhih kobasica, \u0161unke ili pr\u0161uta, uz kisele paprike i krastavce, poneki kola\u010d i vru\u0107i \u010daj. Kasnije, kada bi poslovi kolinja ve\u0107 odmakli, baka je <a href=\"https:\/\/www.bakinakuharica.com\/mesnaJela\/PrzenaJetrica.html\" target=\"_blank\">pekla svje\u017ee svinjske jetrice<\/a> na naglo s puno \u010de\u0161njka, ili bi kuhala saft od jetrica uz palentu, uz obilje ukiseljenih salata<br \/>\nSvakih tri, \u010detri sata kuhao se veliki lonac vina, mirisne, aromati\u010dne i slatke teku\u0107ine koja je \u0161titila mesare od studeni, grijala ih i razgaljivala.<br \/>\nVeliku koli\u010dinu posla kojeg su svi u kolinju imali, radili su bez prigovora, slo\u017eno, zajedni\u010dki, uvijek nasmijani i veseli.<br \/>\nIz \u00abtajnih\u00bb su se kuharica izvla\u010dili recepti za najbolje kobasice \u00ab\u010de\u0161njovke\u00bb, i uvijek su se mu\u0161karci nadmudrivali bi li trebalo vi\u0161e \u010de\u0161njaka, feferona ili ipak napraviti bla\u017ee kobasice za djecu.<br \/>\nTako su prve kobasice zavr\u0161avale u bakinoj kuhinji, a baka bi ih ispekla za probu.<\/p>\n<div id=\"attachment_1254\" style=\"width: 246px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.bakinakuharica.com\/blog\/wp-content\/uploads\/2015\/11\/IzradaKobasica.png\" rel=\"attachment wp-att-1254\"><img aria-describedby=\"caption-attachment-1254\" decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-1254\" src=\"https:\/\/www.bakinakuharica.com\/blog\/wp-content\/uploads\/2015\/11\/IzradaKobasica.png\" alt=\"Izrada kobasica\" width=\"236\" height=\"186\" srcset=\"https:\/\/www.bakinakuharica.com\/blog\/wp-content\/uploads\/2015\/11\/IzradaKobasica.png 236w, https:\/\/www.bakinakuharica.com\/blog\/wp-content\/uploads\/2015\/11\/IzradaKobasica-1x1.png 1w\" sizes=\"(max-width: 236px) 100vw, 236px\" \/><\/a><p id=\"caption-attachment-1254\" class=\"wp-caption-text\">Izrada kobasica<\/p><\/div>\n<p>Ovisno koliko je prase bilo masno, mesar bi rezao \u0161pek koji se topio u mast. Iz tih narezanih komadi\u0107a \u0161peka dobivali su se najslasniji \u010dvarci koje pamtim. A tajna je bila u dodavanju \u0161alice mlijeka pri kraju topljenja, jer bi od mlijeka \u010dvarci postajali divno rumeni i hrskavi, kasnije kad bi ih se procijedilo. \u010cvarci su bili specijalitet svake ku\u0107e u susjedstvu i svi su se susjedi rado hvalili svojim \u00above godine najboljim ikada \u010dvarcima\u00bb.<br \/>\nBaka, pak, je imala svoja zadu\u017eenja u kuhinji da skuha bogatu ve\u010deru za \u00abmesarsku dru\u017ebu\u00bb.<\/p>\n<p>I ta je ve\u010dera, uvijek bila tradicionalna. Po\u010delo se sa sarmom, finim <a href=\"https:\/\/www.bakinakuharica.com\/mesnaJela\/Sarma.html\" target=\"_blank\">sarmicama<\/a> koje su dolazile poredane kao vojnici u loncu, nadjevene svje\u017ee fa\u0161iranim mesom u osvje\u017eavaju\u0107em listu kiselog zelja, sa dosta narezanog suhog \u0161peka sa strane i kojim lovorovim listom.<br \/>\n<script src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\" async=\"\"><\/script><!-- BK_Blog_2015Responsive --> <ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-7449141779691315\" data-ad-slot=\"8884151966\" data-ad-format=\"auto\"><\/ins><script>\/\/ <![CDATA[\n(adsbygoogle = window.adsbygoogle || []).push({});\n\/\/ ]]><\/script><br \/>\nZatim bi na red dolazile pe\u010dene kobasice, svje\u017ee napravljene \u010de\u0161njovke ili <a title=\"krvavice\" href=\"https:\/\/www.kuharicareceptisavjeti.com\/jela-s-mesom-i-pecenja\/ostala-jela-s-mesom-i-pecenja\/krvavice-kolinje\" target=\"_blank\">krvavice<\/a>, uz dinstano kiselo zelje. Uz uzdahe zadovoljnog mljackanja, radila se tada \u00abstru\u010dna analiza kobasica\u00bb i raspravaljalo o tome jesu li ove godine te kobasice bolje od pro\u0161logodi\u0161njih i da li je ipak trebalo dodati jo\u0161 malo feferona u njih.
